Almost all parts of Spain produce cheese, and each one of them is different in their taste, appearance and characteristics. There are many ways to distinguish the types of cheese but in Daivina we will focus on 2 main characteristics: the COMPOSITION and the PERIOD OF HEALING. The Spanish cheeses, depending on their composition, can be made from milk of goat, cow, sheep, or the so-called mixed milk cheeses. These last are produced from the combination of two or even three different milks. From the point of view of the period of healing, the cheese can be: tender, semi-cured and cured.
